I am looking to apply to UT Austin, Texas A&M, Rice University, University of Houston, Stanford, University of Penn. and University of Chicago.

I think that you are a good prospect for all of these, but admissions to more selective schools depends more on 1) your essay 2) can you show that you are passionate/dedicated about/to something than your overall statistics. Most of the people applying to these school will have resumes similar to yours (or a little less).

You have quite an impressive resume! I would try for Stanford, or Texas A&M. Penn and Chicago are also great schools.

Really, it comes down to what school you want to attend, because what you make out of school and then connections you make with people in college are vital to your future success. I think any of these schools would be a great choice.

Just remember to make connections with students, faculty, etc. as they can help you get a great career in your chosen profession upon graduation.
